Bangkok 1899, together with Na Cafe, started hosting Santiago Fernandez Muñoz as our chef-in-residence in September. As a native from Lima, Peru, his menu consisted of traditional “homestyle” cuisine using local, Thai ingredients.
With a strong food culture in the Nang Loeng neighborhood, food is unsurprisingly the top interest of its demographic according to our baseline study. We hope to use the medium of food as a method of cultural diplomacy because it’s an easy entry point for promoting exchange and understanding amongst locals and beyond.
